I'm Here Really

Sorry for the lack of posts this week - as I said in my last post, it was a crazy week and I'm quite pleased to be at the tail end of it. Hubby arrived back this afternoon to a very tired Mummy, a sick little girl (she has a rotten cold and is teething painfully) and a little boy who just wanted someone to pay some attention to him. What a great welcome home. NOT!


Dinner tonight? Hungry Jacks, again bought up on the plane. This time I managed to grab a photo for evidence (although, as you can see I had made a start on it when I remembered that I really needed to blog). It is looking a little worse for wear after a 2 hour plane trip and then being microwaved but it sure did taste good.








I did do some baking today, in the 5 minutes that Offspring #2 was happily engaged in something that didn't involve snotting all over me, and tried a new cupcake recipe. I have a favourite cupcake recipe that turns out deliciously light and fluffy little cakes but had decided that I at least needed to try a couple of others every so often. The write-up for these was good and they were okay, just a bit denser and cake-ier than I'm used to in cupcakes. That said, I have managed to eat 4 so far, so they aren't too bad! I doubled the recipe and ended up with 20.


All-Purpose Cupcake Batter

from Super Food Ideas, April 2006







Makes 12
60g butter, softened
1/4 cup caster sugar
1 teaspoon vanilla essence
1 egg
3/4 cup self-raising flour, sifted
1/4 cup milk

1. Preheat oven to 180 degrees Celsius. Line a 12 hole patty pan with paper cases.

2. Using an electric mixer, cream butter and sugar until pale and creamy. Add vanilla and egg. Beat until well combined.

3. Transfer mixture to a larger bowl and fold in half the flour, followed by half the milk. Repeat with remaining flour and milk. Stir until batter is smooth.

4. Three-quarters fill each paper case with batter. Smooth surface. Bake for 15 to 20 minutes or until a skewer inserted into the centre comes out clean. Stand cakes in pan for 10 minutes. Transfer to a wire rack to cool.

5. Ice or dust with icing sugar as desired.

So Hungry Jack's is like our Burger King? Do they call the burgers Whoppers there too? Do they have the onion rings? I haven't been to BK in ages. I'm craving it now.

Hi Paula, yep HJ's is like your Burger King with Whoppers and thickshakes and onion rings. I LOVE the onion rings - socially it's probably a little scary but gee they taste good! Our closest HJ's is about 1000km's away so it's always a treat when someone goes to, or visits from, Perth and brings it for dinner!
