Trish, over at Light. Sweet. Crude. told me she had a terrific banana cake recipe a couple of weeks ago when I had some over-ripe bananas to use up. I used those ones in a different recipe but hid some of the next lot in the back of the fridge, a necessary measure in a house with two little monkeys, in order to give Trish's recipe a try.
All I can say is: make this recipe! It was delicious. It was moist. It was loudly and widely complimented. And, next time I'm not going to wait for it to cool down, I'll be eating it warm.
Here's a very bad pic of the cake but you'll have to go check out Trish's blog to get the recipe - it's under the heading 'What's Cooking' way down on the right hand side. I used three large-ish bananas and cooked it in a ring pan for about 45 minutes - delicious!

This looks like a good recipe however... I don't like anything banana flavored! Can you believe it?!!? Pretty cake, though. :)
I fed this cake to my brother in law who said he wasn't much of a banana fan. He loved it. So maybe this will be the exception to your rule?

Ah-ha! You've done this to me again RDM! I have so many over-ripe bananas stock-piling in my freezer I have been looking for a great banana cake to make to indulge in. I might have just found it. Thank-you.
Hello, Red Dirt Mummy, I suspect I may the new reader. Dropped by again...and you lead with a recipe that may do away with the ovvvverripe bananas that are calling for my attention. Know what I'm doing when I get back from shopping tomorrow!?!
