Post-Easter Traditions

The first post-Easter tradition is an obvious one. Scoffing lots of chocolate. And hot cross buns.

The second post-Easter tradition is less obvious but just as much fun. After sufficient scoffing time, in the case of my kids a couple of days is generally enough, gather together all the chocolate that's left. Put it into big zip-lock bags, expel the air and zip the bag closed. Then hand each kid a bag and a rolling pin and cover your ears.





When they've finished smashing and bashing find your favourite recipe that calls for choc chips and get baking.

The third part of our post-Easter tradition is the recipe itself. We've made these crunchy, crispy chocolate cookies for the past three or so years and they are always well received. And just so you don't have to go clicking all over the place to find them, I'll put the recipe right here.

Chocolate Crispy Biscuits
from Australian Table magazine, April 2007




125g butter, softened
1 cup caster sugar
1 egg
1 teaspoon vanilla extract
2 cups rice bubbles
1 cup self raising flour
1 cup milk chocolate chips
½ cup shredded coconut
1. Preheat oven to 180˚C. Line 3 biscuit trays with baking paper.
2. Place butter and sugar in a large bowl. Beat with an electric mixer until pale and creamy. Add egg and vanilla and beat until smooth. Add remaining ingredients. Stir well until combined.
3. Place heaped tablespoons of mixture on trays, allowing room to spread. Press down gently. Bake 12-15 minutes, until lightly browned. Cool on tray for 5 minutes before transferring to a wire rack to cool completely.
4. Store in an airtight container.

I'll be passing this one onto the XO Mandi... the lads are looking for an excuse to bake things at the moment - that's if they have any choccies left at all haha!

These look wonderful. I am going to bake a batch for my office staff to cheer them up (we are switching to a new computer system for electronic medical records and it's AWFUL).

Heh bashing at the chocolate would have been so much fun for them! I remember having fun doing it when I was young! :D
