Ridiculously Easy

I saw this one in this month’s issue of Super Food Ideas and decided I’d save it for a night I needed an easy meal. Fast forward all of two days later and this morning I found myself shoving the whole page in my bag as I raced out the door. No niceties like a shopping list for this Mummy!

This was simple and tasted fabulous. Hubby was so impressed that he suggested I make it again for dinner guests and just not tell them how simple it is to put together .

Creamy Pesto Gnocchi

Serves 4


500g fresh potato gnocchi
1 cup light thickened cream
¼ cup sun-dried tomato pesto
150g char grilled capsicum, finely chopped (I left it in strips, it made it easier for the kids to pick it out)
150g baby spinach
½ cup grated parmesan cheese

1. Cook gnocchi in a large saucepan of boiling, salted water, following packet directions, until tender. Drain. Preheat grill on medium-high.
2. Meanwhile, heat a frying pan over medium heat. Add cream and pesto. Simmer, stirring occasionally, for 3 or 4 minutes or until slightly thickened. Add capsicum and spinach. Cook for 1 minute or until spinach has just wilted.
3. Add gnocchi to cream mixture. Toss to combine. Transfer to a greased 6cm-deep, 8 cup-capacity baking dish. Top with cheese. Cook under grill for 5 minutes or until cheese is melted and golden.

Thanks Mandij. I will cook this one soon even though R & J will pick out all the spinach! Or....I could bribe them with sweets if they eat everything on their plates!! XX Anne
